Immediately one of my favourite aglio olios around, without a smidgen of chilli flake or padi in sight – the sophisticatedly aromatic crustacean oil carries the pasta formidably. (I wonder how many crustaceans were wrung dry to formulate such a potent concoction? It’s like the taste of the sea, distilled.) Elsewhere, the generous serving of seafood – and indeed the entire dish – tastes like each component grew up accustomed to Robertson Quay power lunches and mid-day drinks at St. Regis. Warrants return visits. 4.3/5
