Fig and bacon sabayon – candied bacon and fig compote, with fresh berries and a scoop of vanilla ice cream, resting on a bed of champagne sabayon. The sabayon is reminiscent of the custard filling in breads, only slightly delinquent – it probably smokes in the girls’ toilet and plays truant to go to the arcade every now and then. 3.75/5
