A buttery gloss stridently dominates the proceedings, while elsewhere conquering the fish is quite the treasure hunt – from certain core bits that suggest that the sea bass was probably mid-outfield chiong during its untimely capture, to aromatic segments which are pleasingly herb-tinged, you’d be constantly searching for the sweet spot. 3/5
