Buah Keluak Ice Cream - CandlenutBuah Keluak from Candlenut – buah keluak ice cream made with 80% Valhrona chocolate on a bed of salted caramel, chocolate crumble and chilli specks, topped with warm milk chocolate espuma. One of the most stunning local desserts I’ve tried this year. The buah keluak ice cream was itself an intriguing combination of bitter, slightly sour and earthy, but then you mix it with the smooth, warm bitter chocolate and the sweet caramel and the spicy chilli and the poprocks which insistently and persistently go pop pop pop pop in your mouth nonstop throughout the duration of the dessert like fizzy fireworks on steroids, and the dessert becomes an exercise in sweet pleasure and heart-pounding exhilaration. 4.5/5
