Peach & Salted Yolk Tart – slices of brûléed peaches and pistachio bits, sitting atop a sour cream coffee cake with a molten salted yolk filling, served hot. Essentially a tart jacuzzi filled to the brim with salted yolk in a light-tasting custard-esque form, with sweet peach slices soaking lazily within and three spiced pineapple tart crust cubes lingering around the edge spying, being the cheekopeks they are. I liked the interesting combination of flavours, but here the salted yolk exercises considerable restraint when in this instance it could have benefited from showily flaunting his savoury charms like a neon yellow Adidas singlet. 3.3/5
