      • Carlitos Casa de Comidas, the tapas bar along Joo Carlitos Casa de Comidas, the tapas bar along Joo Chiat Road (@carlitos.joochiat). The menu comprises an extensive variety of tapas such as the uber-savoury Gilda Pintxo (anchovies, pickled onion, green olives), the moreish Txipirones Bilbao (grilled squid, crispy baby squid, squid & shallot orzo), the seductively aromatic and oil-slick Gambas al Ajillo (Atlantic prawns, garlic & chilli oil, sourdough) as well as the Suckling Pig which boasted a formidable crackling crunch of skin. 

Other dishes included the juicy Ensalada de Tomate (Momotaro tomato, confit tuna, capers, onion), the hearty Rabo de Toro (Braised beef oxtail, red wine, manchego potato mash) and the feel-good Churros con Chocolate (Homemade churros, Valrhona chocolate).

After dinner, it was off to the back of the restaurant for the hidden speakeasy, Gaudi Room (@gaudi.room). Inspired by Antoni Gaudí, the legendary Catalan architect and designer, the cosy space serves a selection of tipples such as the playfully savoury La Sagrada Paloma (tequila, gin, Aperol, lime, grapefruit, togarashi, Kimuchi no Moto) and Gaudoni Negroni (gin, dry vermouth, campari, casis, cacao).

        Qin Restaurant & Bar, the modern dining restaurant Qin Restaurant & Bar, the modern dining restaurant set on Level 4 of The Clan Hotel (@qinsingapore). The restaurant is helmed by Marvas Ng (@marvasng), who previously headed modern Asian restaurant Path, and he brings along his signature brand of refined French techniques crossed with bold East Asian flavours. His debut a la carte menu at the restaurant will please those seeking inventive, playful and elevated interpretations of familiar regional flavours - think chrysanthemum, bak kut teh, Teochew braised meat, chicken rice, black pepper, prawn paste and gula melaka. Very accessible pricing too, given the quality of the offerings. 

Highlights include the chilled and savoury Shanghainese Hairy Crab Roe "Dou Hua"; the peppery and juicy Wagyu Beef "Hei Hu Jiao”; the moist, silky and deeply flavourful (and limited quantity - please reserve in advance) 5-days Dry Aged Local Kampong Chicken with arrestingly crispy skin; the feel-good Sesame Su made using Okinawa brown sugar and filo pastry; and the Cameron Highland "Nai Cha” dessert that should be experienced spoiler-free. 

Other dishes include Local Marinated Cherries Tomato, Straits Wild Caught Sea Bream "Hai Diao”, Sarawak Pork Ear Terrine "Qian Cheng”, Hokkaido Pork Belly (Yume No Daichi) and the very moreish Cameron Highland Cauliflower “Gan Guo”.

From their tipples selection, the Monk 罗汉 was a daringly luo han guo-bitter take on a Negroni, while the rum-based Orh Nee 芋泥 was frothy, coconut-kissed pleasure.

        The St. Regis Singapore, which recently concluded The St. Regis Singapore, which recently concluded an extensive transformation project, with guest rooms now boasting new interiors and brand new dining concepts introduced (@stregissg). Overlooking the leafy and affluent neighbourhood through floor-to-ceiling windows, the 52sqm Penthouse King is dressed in soothing shades of green, blue, cream and taupe with floral accents. The French marble bathroom comes with double vanities, an enclosed rainfall shower – with powerful vertical massage jets which can give obscure, hard-to-reach spots on your back a good blasting – as well as a freestanding bathtub. 

Marriott Bonvoy Platinum Elite members and above enjoy a two-hour complimentary aperitivo session at modern Italian restaurant Sophia in the afternoon. Eligible guests are entitled to servings of selected antipasti as well as two beverages, with options including Negroni, Tequila Sunrise, Aperol Spritz and Whisky Highball cocktails or prosecco, red wine, white wine or bottled beer.

In terms of wellness, The St. Regis Spa offers face, body and nail treatments using Sothys, Charm d’Orient, Zents, and Margaret Dabbs® London products. All hotel guests can access the various facilities within the spa’s Wet Lounge such as the cedarwood Finnish sauna, ice fountain, steam chambers – where notably eucalyptus is regularly spritzed onto the walls such that you feel your almost-naked body is luxuriating within a life-sized diffuser – as well as the outdoor Spa Garden with a piping hot jacuzzi for moments when you want to experience being (mightily relaxed) human stew.

At 6.30pm every evening, the Champagne Sabrage Ritual – a St. Regis staple – takes place at the foot of the lobby’s grand staircase, during which a dramatic opening of a champagne bottle with a sabre kickstarts a round of free champagne for guests in attendance.

        The St. Regis Bar Singapore, the new concept at th The St. Regis Bar Singapore, the new concept at the recently transformed The St. Regis Singapore which replaces the former Astor Bar (@stregisbarsingapore). The bar takes its inspirations from both early 20th-century Manhattan and the legacy of the legendary The St Regis New York. The mixology programme is led by Kelvin Saquilayan, formerly from Manhattan Bar and Republic Bar (@saki_kelvin). 

The new “Time After Time” menu takes you on a journey through defining decades of American cocktail trends while simultaneously weaving in local flavours and cultural references. Highlights including the surprisingly ginger-spicy Merlion Sling, the Manhattan-esque and Granny Smith-fresh Midnight Orchard and the floral martini-style Roar & Bloom which played like a lychee martini with reduced sugar. Adventure seekers can go for the New York Or Nowhere, a smoky clarified tequila-mezcal punch which takes very literal inspiration from its namesake city’s classic pastrami sandwich.

My personal favourite was the Club Kid Espresso, which was redolent with coconut notes and reminded me of a particularly ah beng reincarnation of Old Tea Hut gula melaka milk coffee.

        Hup Lok, the prawn noodle restaurant along Haveloc Hup Lok, the prawn noodle restaurant along Havelock Road (@huplok725). The restaurant prides itself on the use of the saline-sweet "Kami no Ebi" (god of prawns) in their dishes, best appreciated via their peppery signature Prawn Mee (both soup and dry versions provide access to the lip-coatingly thick broth). 

The Kami Prawn Toast was a riotously crispy affair, while the Tempura Prawns likely suffered much prolonged Swiftian heartache previously given the thickness of their batter walls, with your prize being the sweetness of prawn flesh post-batter battle. The wet-type Claypot Hokkien Mee - paired with a smoky sweet chilli - was topped with a slab of fried egg, and due rationing of the egg throughout is advised, as the egg-less portion fared considerably less well than the egg-companied segment. I do wonder how the dish would fare if the egg was directly fried with the noodles instead of served separately.

Elsewhere, the sweet King Scallop writhed in a spicy, peppery gravy, while Grandpa’s Pomfret Soup provided comforting, familial feels.

Decked in Japanese hardwood alongside cool shades and textures, the 52sqm room features a cosy, Japanese engawa-inspired window-side seating area perfect for taking in the calming views of Tokyo Tower and the expansive skyline. The bathroom has double vanities, a cavernous shower area with a rainfall shower as well as an en-suite bathtub, with luxurious Le Labo Santal 33 shower amenities available for your aquatic relaxation activities. 

In terms of wellness, the 35th floor features the Fairmont Spa which offers a variety of treatments using products from Kerstin Florian; a Technogym-fitted fitness centre with an expansive private studio which guests can book for personal training or an individual workout session; a changing room with a hot tub, cold plunge, dry sauna and traditional Japanese bath with Le Labo Rose 31 amenities; and a 20m indoor swimming pool with a separate hot tub as well as an outdoor relaxation pool with sundeck with views of Tokyo Bay.

One of the hotel’s most unique and anticipated features is Serene, the charming Labrador Retriever and appointed “Chief Happiness Officer” whose kennel is located in the ground floor reception area.

        Sophia, the new glasshouse-inspired modern Italian Sophia, the new glasshouse-inspired modern Italian concept at The St. Regis Singapore which celebrates the hallmarks of authentic Italian cuisine from 11 different regions in Italy (@sophia.stregissg). The a la carte menu comprises a variety of pizzas, focaccia, antipasti, primi piatti, secondi and dessert selections. The Carpaccio Di Gamberi (mazara prawn, raspberry gel, celery, plankton oil, avruga pearls) was slickly-dressed, cool and berry-sweet, while the Polpo Grigliato (grilled octopus, fava beans, red onion, mint, semi-dried tomato) offered a firm, tender chew. 

The Tagliata Di Manzo (Robbin Island Wagyu MB9+, grilled striploin, arugula, parmigiano reggiano, balsamic vinegar) was sexily smoky and fatty, with most bites featuring a pleasurable saline burst at the end, while the Spaghetti All’astice (Boston lobster, cherry tomato, lobster jus, basil) was drenched in bisque-esque richness, with every strand of pasta being steadfastly firm.

The menu is presented courtesy of Executive Sous Chef Cindy Khoo alongside Michelin-starred Chef Adrien Descouls who operates the hotel-restaurant Origines in France. 

The afternoon tea comprises savouries such as Huître (oyster with floral tea jelly, lemongrass, vin jaune), Shepherd's Truffle Broth (French winter truffle, marabel potato, cheese), Tartare De Bœuf (fin gras du Mézenc, spiced tea, roasted artichoke sabayon) and Pink Radish Flower Tarte (vegetable top pesto, beurre noisette) which arrive looking every bit like something served at a Michelin-starred establishment, with table-side flourishes (i.e. truffle shaving) for that touch of fine-dining flair.

Guests are entitled to two beverages, which include tea options from local gourmet tea brand Pryce. A team member comes over and gives you a spritz sample for each flavour, from the Tie Guan Yin-based Vanda Miss Joaquim and Alishan oolong based Pink Ginger.lily to the a GABA oolong-based Kyoho Oolong and rather gorgeous peony white tea-based Shizuoka Muskmelon. It was a classy and service-oriented touch. 

The sweet chapter of the programme comprises dainty treats such as Berries En Fleurs Gâteau (tea-infused crémeux, freeze-dried raspberries, Botanique en Fleurs 68%, house-blend chocolate), Hakuto Peach Chouquette (herb gel, peach tea, framboise jam), Hojicha Honey Madeleines (honey olive glaze) and Hokkaido Potato Churros (served with kumquat cream).

The hotel has the scale and swagger of a luxury hotel but eye-catching artistic sensibilities you would expect from a boutique property, with gorgeous set pieces and artworks everywhere: a video wall installation on the ground level by filmmaker Takashi Makino depicts the changing seasons; a 52-metre installation of twisted wood made using wood scraps from local factories suspends dramatically from the ceiling of ground level restaurant P72; an enthrallingly beautiful indigo-dyed staircase connects tea house Nijiri and cocktail concept Sonata Bar & Lounge, the latter doubling up as the area where guests are registered upon arrival on the 20th level; one of Sonata’s rooms boasts a 1,500-pound wall backdrop incorporating vintage Japanese speakers; and vinyl lounge The Listening Room by OJAS‘s combination of floor-to-ceiling windows overlooking Osaka Castle, creamy and white shades as well as snazzy-looking audio equipment gives the place a luxurious, futuristic zen vibe.
