Wild-caught lingcod fillet from The Naked Finn – grilled and oven-baked, finished with sea salt and extra virgin olive oil. Neither a ling nor a cod, but while the meatier external layers of fish taste slightly manlier and tougher than you’d expect cod to, the heart of the fillet is all soft and buttery cod-esque goodness. 3.8/5
