Prawn Risotto - The Betterfield

Prawn risotto from The Betterfield. Essentially what happens after a very gregarious Mui Fan (烩饭) who grew up on Sixth Avenue goes travelling in northern Italy and takes a ride on a Venetian gondola. The risotto rice grains are moist and distinctive and nicely absorb the prawn essence, which results in the risotto having a rather brothy feel. There is a slight whiff of truffle in the air, and the use of the more restrained grana padano cheese ensures things don’t get too cheesy. Even the prawns involved are fancy – they are knotted stylishly even after death. 4/5
