Mango Scallops - Violet HerbsMango scallops with parsnip puree, mango gel, parma ham-infused potato chips, mango salsa, micro herb and chocolate crumble from Violet Herbs. The marquee stars were happily plump and reliably delectable, whilst the parsnip puree was essentially a slightly bitter and herby potato mash, all hipster now after having traipsed to Chye Seng Huat Hardware and collected some coffee cred. The mango gel tasted like dried mango crossed with mango sago pomelo (杨枝甘露), and elsewhere the potato chips had a certain aromatic roast to them (probably due to their porky infusion). 3.9/5
